Exchange server is designed to support email and calendars and communications for large organizations. It works with Outlook on each person’s computer.
Windows server is designed to do general server tasks, not as specific as exchange server.
Windows 7 computers work well with exchange server and windows server (but of course will also work just as well with other servers).

Here’s my current server setup.. on a floating desk (well.. kinda) with no visible wires! everything goes round the back of the desk’s edge, then down behind the bookcase to the side then off to the devices attached. It’s just an iMac Intel Core 2 Duo 1.86ghz with 2GB ram, 160GB internal drive, hooked upto two 1TB USB2 hard disks, an Airport Extreme (dual band) with a 500GB drive attached, and a 1400va UPS hidden away, and also running OSX Server 10.5
