Banquet buffet, or does it include people who are?

This guy offered me a job to work as a “server” at a banquet. He gave me no additional info to what it requires, and I’m really confused. Am I serving and waiting on people at the banquet you guys think? I was under the impression that seeing as they’re so big, I’d simply take out trays and they take the dishes. I’m confused as to what a server at a banquet does, although I hear I may be running chairs etc. Not to mention it’s 5 hours, what could a server possibly do for 5 hours, just wait for meals?

Servers at banquets take food and drink to tables and remove plates and serving wear. They also bring water and other drinks to tables.


They may also require you to help set up and tear down the tables.

90% of the time is is like serving at a restaurant, you will find some who do a family style service were they bring bowls of food, salads, meat and other foods to the tales, this happens more with Asian banquets, on occasion you may find for a wedding, bar mitzvah or other function a buffet style serving system, then you just clear tables, fill water glasses and break drinks and coffee. A 5 hour shift is common as you go in 1 hour before and leave once it is over, your not required to breakdown the tables and clean up, they have staff for that.

Depending on the type of party, of course (a wedding is different than a sweet 16).

When you get there, the tables and chairs should be set up- you shouldn’t have to do that, it’s a different staff for that. But you will have to set the tables. Silverware, plates, glasses, napkins, etc. Then you go in the kitchen & do sidework. Prepare butters, bread baskets, salad dressings, cut lemons, make coffee, tea, etc.

When the guests arrive, they may have a cocktail hour. Sometimes THEY go to the bar themselves, sometimes you have to run drinks. There may be appetizers then, too. They may be set up buffet style, or you may have to pass trays (a huge PITA- your arm can get really tired).

Dinner could be a buffet. Then there’s probably be more experienced servers running the buffet itself, or it may be the kitchen staff. But meanwhile, you basically walk the room & make sure everyone’s ok. Look for eye contact.

If it’s “plated” it’s easy peasy. You basically follow the other servers & serve a table at a time of soup and/or salad. The tables should be numbered, either with actual numbers, or verbally among the servers. You start with 1, and snake around to the last one. By the time you serve the last one, you go back to 1 and pick up the soup and/or salad. Then you serve the plated food. Same technique. Then you go back & clear it. There may be a cake- someone will cut it, and the rest of you will serve it. Or whatever the dessert may be. Then you go with coffee. Usually in thermal pots.

HOPEFULLY this is not a shower- then you have to sit while the ***** opens her gifts- it’s ENDLESS. Or if there’s a wedding, there may be dancing. If it’s neither of those, you’re basically cleaning around the people. When the room’s cleaned, and the kitchen’s cleaned, you get paid & go home.

I’ve worked a million banquets. It’s easy, a little physical, but no real brain work, just follow everyone else. And it’s usually good money. This could be a great side gig for you. GOOD LUCK.
